French families enjoy an abundance of good seasonal vegetables at home. This happened to coincide with the delivery of my copy of Rick Stein\u2019s book \u2018Secret France\u2019 so I tried this recipe which he apparently found in a book featuring the artist Monet\u2019s favourite recipes from his home at Giverny. (use a 4mm slicing disks in a processor)<\/span><\/p><p><span style=\"font-family: Ubuntu;\">30g butter<\/span><\/p><p><span style=\"font-family: Ubuntu;\">30g flour<\/span><\/p><p><span style=\"font-family: Ubuntu;\">Juice of 1 lemon<\/span><\/p><p><span style=\"font-family: Ubuntu;\">2 tsp caster sugar (optional &#8211; carrots are OK without added sugar)<br \/><\/span><\/p><p><span style=\"font-family: Ubuntu;\">Small handful chopped parsley and tarragon (The dried stuff is good but use less)<\/span><\/p><p><span style=\"font-family: Ubuntu;\">Salt and black pepper to taste.<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-33 elementor-top-column elementor-element elementor-element-b6c9319\" data-id=\"b6c9319\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-a2c3466 elementor-widget elementor-widget-text-editor\" data-id=\"a2c3466\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>METHOD<\/strong><\/p><p><span style=\"font-family: Ubuntu;\">Put the carrots in a pan of water and season with a teaspoon of salt. Cook the carrots for about 10 minutes until tender but not soft. Drain and reserve some of the cooking water.<\/span><\/p><p><span style=\"font-family: Ubuntu;\">Melt the butter in a large pan and whisk in the flour. Gradually add about 250ml of the cooking liquid, whisking all the time to avoid lumps. Add the herbs and black pepper, bring t<\/span><span style=\"font-family: Ubuntu;\">o<\/span><span style=\"font-family: Ubuntu;\"> the boil to thicken. Add the lemon juice and sugar, put the carrots back in the pan and steam gently adding more cooking water to loosen. You can simmer gently for a further 20 to 30 m<\/span><span style=\"font-family: Ubuntu;\">i<\/span><span style=\"font-family: Ubuntu;\">nutes <\/span><span style=\"font-family: Ubuntu;\">but don\u2019t let them break up, <\/span><span style=\"font-family: Ubuntu;\">then<\/span><span style=\"font-family: Ubuntu;\"> serve. <\/span><span style=\"font-family: Ubuntu;\">Alternatively you can put the in an oven proof dish and cook for about 30 minuets. In our case its usually green beans (haricot vert). While there is nothing as good as simply cooked beans straight from the garden, we blench them in boiling water, chill in iced water, dry and freeze on open trays before bagging them for the winter months.<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-28476ac elementor-widget elementor-widget-image\" data-id=\"28476ac\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"image.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<img decoding=\"async\" src=\"https:\/\/placedeleglise.net\/wp-content\/uploads\/elementor\/thumbs\/Beans-rotated-phqp73ybm0q3stoszbid3oonskammyrge2k36y8rto.jpg\" title=\"Beans\" alt=\"Beans\" loading=\"lazy\" \/>\t\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-33 elementor-top-column elementor-element elementor-element-66d8a37\" data-id=\"66d8a37\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-a6c34f0 elementor-widget elementor-widget-text-editor\" data-id=\"a6c34f0\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>INGREDIENTS<\/strong><\/p><p><span style=\"font-family: Ubuntu;\">A bag of frozen green beans, sliced runner beans, French beans or the Spanish flat beans.<\/span><\/p><p><span style=\"font-family: Ubuntu;\">Garlic, Butter, salt <\/span><\/p><p><span style=\"font-family: Ubuntu;\">Chopped tomatoes.<\/span><\/p><p><span style=\"font-family: Ubuntu;\">Cooks note; Dare I say that carnivores can always add some fried bacon or ham lardons to the beans!<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-33 elementor-top-column elementor-element elementor-element-7701ed9\" data-id=\"7701ed9\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-b57d9de elementor-widget elementor-widget-text-editor\" data-id=\"b57d9de\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>METHOD<\/strong><\/p><p><span style=\"font-family: Ubuntu;\">Place the frozen beans in a large pan with a lid and very gently heat to defrost. Add crushed garlic salt and a little butter. Continue until\u00a0 the beans are <\/span><span style=\"font-family: Ubuntu;\">completely<\/span><span style=\"font-family: Ubuntu;\"> defrosted and starting to caramelise a little.<\/span><\/p><p><span style=\"font-family: Ubuntu;\">Alternatively continue as above (without caramelising them) but add some chopped tomatoes <\/span><span style=\"font-family: Ubuntu;\">(tinned ones are good too) <\/span><span style=\"font-family: Ubuntu;\">and gently steam the mixture until it becomes dryish to serve. <\/span><span style=\"font-family: Ubuntu;\">Or serve chilled as a salad.<\/span><\/p><p><span style=\"font-family: Ubuntu;\">O<\/span><span style=\"font-family: Ubuntu;\">bviously this also works with shop bought frozen beans.<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-6be01f6 elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"6be01f6\" data-element_type=\"section\" data-e-type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-top-column elementor-element elementor-element-7ecf394\" data-id=\"7ecf394\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-7ebe5fb elementor-widget elementor-widget-text-editor\" data-id=\"7ebe5fb\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>Thinking about frozen food<\/strong>, it&#8217;s always good to keep a bag of frozen peas and some frozen chopped spinach cubes in the deep freeze. Either use them as vegetable accompaniment or to add to other dishes. Its only there as a thickening.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-33 elementor-top-column elementor-element elementor-element-ca379a2\" data-id=\"ca379a2\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-582ff89 elementor-widget elementor-widget-text-editor\" data-id=\"582ff89\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>METHOD<\/strong><\/p><p>Gently fry the chopped onion in the butter or oil. Add the flour, garlic and spices loosening them with vegetable stock to avoid lumps.<\/p><p>Add the frozen vegetables to the pan and top up with the remaining stock or water. Simmer gently until tender. Adjust the seasoning and spices. Serve with rice or couscous.<\/p><p>Of course you can make this ahead and it is even improved with keeping in the fridge for a day.
