This is probably because I don\u2019t have a \u201csweet tooth\u201d and for me deserts are not worth the extra calories. <\/span><\/p><p align=\"justify\"><span style=\"font-family: Arial, serif;\">But I forget, the third (or possibly fourth course) of any good French meal &#8212; CHEESE!!. Correctly in my view before we start thinking about anything sweet we must bring on the cheese! With more than <\/span><span style=\"font-family: Arial, serif;\">400 French cheeses for you to try, i<\/span><span style=\"font-family: Arial, serif;\">t makes sense.<br \/><\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-33 elementor-top-column elementor-element elementor-element-940a6ac\" data-id=\"940a6ac\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-436af4c elementor-widget elementor-widget-text-editor\" data-id=\"436af4c\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p align=\"justify\"><strong>THE FRENCH WAY<\/strong><\/p><p align=\"justify\"><span style=\"font-family: Arial, serif;\">Now the occasion might be an annual village function, a grand celebration or Sunday lunch with friends and neighbours. let\u2019s assume that the invitation was for noon and that you arrived a polite half hour late, you may find that it is five or six in the afternoon before you get round to dessert anyway. The point is that eating and drinking is a very social thing for French people. I add the herbs at this stage, then mix in the activated yeast. Start mixing with a fork or spoon but you will soon want to get your hands in. Use some extra olive oil to stop the dough sticking, if it dose rub it of your hands with some extra dry flour.<\/span><\/p><p><strong><span style=\"font-family: Ubuntu;\">TIP:- <\/span><\/strong><span style=\"font-family: Ubuntu;\">The bread dough should be very loose (soft) so as long as its well mixed you wont have to work it, just leave it in the bowl, in a warm place, covered with cling-film.<\/span><\/p><p><span style=\"font-family: Ubuntu;\">When its doubled in size, knock it down a bit and press it into your well-oiled baking tin. Push your halved olives or other ingredients into the dough and cover again with cling-film. When its risen to double again bake in a moderate oven for about half an hour, maybe longer. Turn it out onto a wire rack to cool. This coincided with Jon\u2019s birthday (1<\/span><sup><span style=\"font-family: Ubuntu;\">st<\/span><\/sup><span style=\"font-family: Ubuntu;\">July). We always included some music <\/span><span style=\"font-family: Ubuntu;\">or other<\/span><span style=\"font-family: Ubuntu;\"> entertainment and above all \u2018<\/span><span style=\"font-family: Ubuntu;\">l<\/span><span style=\"font-family: Ubuntu;\">es saucisses anglaises\u2019, grilled on our barbecue. Our French friends and neighbours were crazy for them. We went to great trouble the have plenty freshly made by a butcher in England <\/span><span style=\"font-family: Ubuntu;\">which<\/span><span style=\"font-family: Ubuntu;\"> we transported direct<\/span><span style=\"font-family: Ubuntu;\">ly<\/span><span style=\"font-family: Ubuntu;\"> home to France in <\/span><span style=\"font-family: Ubuntu;\">our<\/span><span style=\"font-family: Ubuntu;\"> electric cool box.<\/span><\/p><p><span style=\"font-family: Ubuntu;\">With the fall-out from the UK leaving the EU, it is no longer legal to import sausages <\/span><span style=\"font-family: Ubuntu;\">and similar produce, <\/span><span style=\"font-family: Ubuntu;\">into Europe so we <\/span><span style=\"font-family: Ubuntu;\">now <\/span><span style=\"font-family: Ubuntu;\">have to make <\/span><span style=\"font-family: Ubuntu;\">here<\/span><span style=\"font-family: Ubuntu;\"> ourselves. I bought a grinding and sausage filling machine. <\/span><\/p><p><span style=\"font-family: Ubuntu;\">This seems to be a good basic recipe.<\/span><\/p><p><strong><span style=\"font-family: Ubuntu;\"><u>TIPS:- <\/u><\/span><\/strong><span style=\"font-family: Ubuntu;\">Keep the meat and sausage mixtures as cold as possible by returning to the refrigerator at every opportunity. Thoroughly clean the working area and your equipment after each operation.<\/span><\/p><p><span style=\"font-family: Ubuntu;\">Once you have pealed and cored the apples keep them in cold water with some lemon Juice.<\/span><\/p><p><span style=\"font-family: Ubuntu;\">You can also try another popular version with leeks.<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-33 elementor-top-column elementor-element elementor-element-e17b6d6\" data-id=\"e17b6d6\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-f623142 elementor-widget elementor-widget-text-editor\" data-id=\"f623142\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"font-family: Ubuntu;\"><u><strong>BASIC INGREDIENTS<\/strong><br \/><\/u><\/span><\/p><p><span style=\"font-family: Ubuntu;\">1kg lean pork such as (Saut\u00e9 de porc) trimmed of excess sinus and checked for bones<\/span><\/p><p><span style=\"font-family: Ubuntu;\">1kg pork belly trimmed and de boned <\/span><\/p><p><span style=\"font-family: Ubuntu;\"> After preparation you should end up with between 1.8 and 2.2 kg meat.<\/span><\/p><p><span style=\"font-family: Ubuntu;\"><u>Herbs and spices:<\/u><\/span><\/p><p><span style=\"font-family: Ubuntu;\">2 \u2013 3 tablespoons chopped fresh thyme<\/span><\/p><p><span style=\"font-family: Ubuntu;\">2 \u2013 3 tablespoons chopped fresh sage<\/span><\/p><p><span style=\"font-family: Ubuntu;\">2 \u2013 3 tablespoons chopped fresh parsley<\/span><\/p><p><span style=\"font-family: Ubuntu;\">1 tablespoon ground coriander<\/span><\/p><p><span style=\"font-family: Ubuntu;\">1 teaspoons ground ginger (if liked)<\/span><\/p><p><span style=\"font-family: Ubuntu;\">1 tablespoon white pepper<\/span><\/p><p><span style=\"font-family: Ubuntu;\">1\/2 teaspoon ground nutmeg<\/span><\/p><p><span style=\"font-family: Ubuntu;\">1-1\/2 tablespoons salt ( if using Maldon salt flakes grind it first)<\/span><\/p><p><span style=\"font-family: Ubuntu;\">2 cloves garlic crushed<\/span><\/p><p><span style=\"font-family: Ubuntu;\">100 grams fine breadcrumbs or sausage rusk (or omit this for meaty sausages)<\/span><\/p><p><span style=\"font-family: Ubuntu;\">3 \u2013 4 metres 30mm natural hog casings<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-33 elementor-top-column elementor-element elementor-element-bc6a639\" data-id=\"bc6a639\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-c0e7854 elementor-widget elementor-widget-text-editor\" data-id=\"c0e7854\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>METHOD<\/strong><\/p><p><span style=\"font-family: Ubuntu;\">Prepare the meat the day before making sausages. Dice the meat and pass it all through a 12 mm mincing plate. Add the herbs and spices, mix thoroughly and mince again using a 8 mm mincing plate. Rest the sausage mix for at least two hours in the refrigerator or overnight before making the sausages using you sausage funnel attachment as per maker instructions. Add a little cold water to ease the mixing and filling process.<\/span><\/p><p><strong><span style=\"font-family: Ubuntu;\"><u>PORK and APPLE variation.<\/u><\/span><\/strong><\/p><p><span style=\"font-family: Ubuntu;\">Cut back on the fresh herbs (by half?)<\/span><\/p><p><span style=\"font-family: Ubuntu;\">50 -75 ml of cider<\/span><\/p><p><span style=\"font-family: Ubuntu;\">1Kg Sharpish apples cored (you can leave some or all of the skin on).<\/span><\/p><p><span style=\"font-family: Ubuntu;\">Just before making the sausages, mince the apples and add to the meat with the cider and mix thoroughly. <\/span><\/p><p><strong><span style=\"font-family: Ubuntu;\"><u>PORK with ROQUEFORT<\/u><\/span><\/strong><\/p><p><span style=\"font-family: Ubuntu;\">Experiment with any blue cheese basing the mixture on the above. Think about the herbs and spices. Use about 200g cheese per kilo of sausage meat and mix it very well.
